4. Instruções de operação
The Shun Classic Brisket Knife is designed for precision slicing of large cooked meats. Its long, thin blade and hollow ground indentations minimize drag, allowing for smooth, even cuts.
4.1 Slicing Technique
- Place the cooked meat (e.g., brisket, roast, ham) on a stable cutting board.
- Hold the knife firmly with the D-shaped Pakkawood handle, ensuring a comfortable and secure grip.
- Position the blade at one end of the meat. Use a single, long, sweeping motion to slice through the meat. Avoid sawing back and forth, as this can tear the fibers and reduce juice retention.
- Utilize the full length of the 12-inch blade for optimal results, creating uniform slices.
4.2 Precauções de segurança
- Sempre corte longe do seu corpo.
- Keep your free hand clear of the blade's path. Use a claw grip to hold the food, tucking your fingertips under your knuckles.
- Ensure your cutting surface is stable and non-slip.
- Nunca tente apanhar uma faca que esteja a cair.
- Do not use this knife to cut through bones or frozen foods, as this can damage the delicate edge.

5. Manutenção
5.1 Limpeza
- Hand wash your Shun knife immediately after each use with warm water and a mild dish soap.
- Avoid abrasive cleaners or scrubbers that can scratch the blade or handle.
- Dry the knife thoroughly with a soft towel immediately after washing. Do not air dry, as this can lead to water spots or corrosion.
- Do NOT wash in a dishwasher. Dishwashers can damage the blade, dull the edge, and degrade the Pakkawood handle due to harsh detergents and high temperatures.
5.2 Sharpening and Honing
Shun knives are known for their exceptional edge retention. However, all knives require periodic maintenance to stay sharp.
- Afiação: Regularly hone your knife with a honing steel to realign the blade's edge. This should be done frequently, even daily, depending on usage.
- Afiação: For true sharpening, which removes a small amount of steel to create a new edge, it is recommended to use a professional sharpening service or a high-quality whetstone. Shun offers free sharpening and honing services for their knives.
5.3 Armazenamento
Proper storage protects the blade and ensures safety.
- Store the knife in its Saya (wooden sheath) when not in use.
- Alternatively, use a knife block, magnetic strip, or in-drawer knife organizer to prevent the blade from coming into contact with other utensils, which can dull or chip the edge.
6. Solução De Problemas
- Dull Edge: If the knife feels dull, it likely needs honing or sharpening. Refer to Section 5.2 for maintenance.
- Alimentos grudando na lâmina: The hollow ground indentations are designed to minimize sticking. Ensure the blade is clean and dry. If food still sticks, adjust your slicing technique to use a single, smooth motion.
- Pontos de ferrugem: Although made of stainless steel, prolonged exposure to moisture or acidic foods can cause rust. Clean immediately after use and dry thoroughly. If rust spots appear, they can often be removed with a non-abrasive cleaner designed for stainless steel.
- Handle Discoloration/Damage: Avoid dishwashers and harsh chemicals. If the Pakkawood handle shows signs of wear, it may benefit from occasional oiling with food-grade mineral oil.
